Koliva recipe for Memorial Service

2 cups wheatberrries
1 cup confectioner sugar
1/2 cup black raisins
1/2 cup yellow raisins
Rind from a small orange
2 tbs cinnamon
2 tbs sesame seeds
Some parsley sprigs
Pomegranate seeds
1/2 cup slivered almonds
1/2 cup of crushed walnuts
White Jordan Almonds
1 cup crushed graham crackers.

First boil wheatberrries for 1 1/2 hours.  Drain in a colander for a few hours.  In the morning  mix in 1/2  confectioner sugar, cinnamon, sesame seeds, walnuts, almonds, orange rinds, pomegranate, yellow and black raisins, and parsley.  Mix that all together.  Pour that into a pretty bowl.  Next layer the top with the crushed  graham crackers creating a barrier between the mixtures and the sugar.  Pat it flat.  Now place remaining confectioner sugar on top .  It should be a thick layer.  Finally take the White Jordan Almonds and write the first letter and last letter of the deceased name.  You may also make the sign of the cross with the almonds too.
